Two Great Low Carb Recipes …
I tried these two recipes last week and they were fantastic. Both come from bariatriceating.com and are made on your stovetop. Pretty quick and easy too.
Unfortunately I didn’t take any photos when I made them, but they really did look just like the ones below. Well, maybe with the exception of the fresh green sprigs on top that make them look fancier 🙂
I even went out and bought Fennel Seed for this recipe – which I’ve never bought in my life. Come to think of it, I now probably have enough to last for my lifetime 🙂 Although I truly expect I will be making this recipe regularly anyway. Once you stir in the ricotta mixture it truly tastes like lasagna (without the noodles of course).
I’m sure that if you are feeding family members or otherwise want pasta in it that you can just add it and it would taste great. I did think about trying to make zucchini noodles and adding them but never got around to it. Oh and one deviation I did make was that I didn’t have fresh basil, and even though I could have just added the dried stuff I ended up having some pesto sauce which is mainly made from basil and oil so I added that. I think that likely helped it turn out better than had I added the dry stuff.
It made a lot of soup – approx 10 cups. I froze leftovers to enjoy in the coming weeks.
I was very pleased with how this came out, especially since I’ve never made Swedish Meatballs before. Even my husband enjoyed it (full disclosure – he would not add the greek yogurt to his bowl 🙂 The only deviation I made on this one is I left out the mushrooms since I don’t like them.
To me this tasted as good, if not better, than any swedish meatball appetizers I’ve ever had at parties or events. Made a decent amount of gravy also so, like the lasagna soup, you could serve over pasta if you like.
This made approx 24 mini meatballs.
