HEALTHY FROZEN GREEK YOGURT RECIPE
This is a real easy recipe with only two ingredients –
- greek yogurt (5.3 oz container) I used toasted coconut because I usually have that on hand; you can use plain, vanilla, or whatever flavor suits your taste.
- bag of frozen fruit (10-12 oz bag) I used mangoes but you can try any frozen fruit you like.
Here is a photo of the ingredients I used when I made it last night using mangoes — my new favorite flavor. I’ve also made it with frozen strawberries, peaches and mixed berries. The whole recipe costs me $2 because I bought the bag of fruit at Dollar Tree and the yogurt typically costs only $1 per container.
I used my Vitamix blender to make this. Since you defrost the fruit a bit ahead of time, the ingredients are soft so I expect you can likely use a Ninja, regular or bullet blender to make it also. You may have to do it in two batches if you use a bullet blender. I’ve never tried any of those blenders to make it so if you do, please let us know how it turned out.
- Let the frozen bag of fruit sit out 10-15 minutes prior to making so it defrosts a bit. DO NOT FULLY DEFROST.
- Empty container of yogurt into the blender.
- Add softened fruit on top.
- Blend until fully mixed and sherbert-like consistency
My Vitamix model has a preset for ‘frozen desserts’ so all I do is select that preset and use the tamper’ (see photo above – looks like a gray rolling pin) to push down the fruit while it’s blending. The Vitamix automatically shuts off when it’s done. The consistency will be like a soft sherbet. Dish out and eat immediately or put in the freezer to allow it to harden more so you can eat later.
If using another blender, use a very high speed for one minute or as much time as needed for the ingredients to blend into a semi-frozen consistency. You may need to stop your blender several times to mix it all up depending on how things are looking. Worst case if it doesn’t turn out well, just throw some milk in there, blend some more, and make yourself a nice frozen shake 🙂
Because I’m such a ‘gadgets’ person I bought these molds from Amazon. I like using them since I feel like I’m eating a cone. You will end up with at least 5 servings, and since there are only four cone molds, for the last one I usually just dish it into a bowl and eat right away.
